SATURNIA THERMAL HOT SPRINGS
We’ll spend an afternoon in the healing waters of Saturnia hot springs, where you can bathe under the waterfall that feeds the springs or relax in one of the many naturally formed pools looking out over the beautiful tuscan countryside.
OLIVE PICKING AT ST VIRGO
Using traditional methods that don't damage the trees, we'll pick olives together while learning about different olive varieties, local agricultural practices, and the legends surrounding the olive tree.

WALK & BEACH IN MAREMMA
REGIONAL PARKA walk through the park's pine forests offers spectacular views of the surrounding countryside and coastline. We'll spend some time on the beach overlooking the Tuscan islands.

FLAVOURED OIL WORKSHOP
A chance to make your oil personal! Using herbs from the garden and chillies from the vegetable patch, we'll infuse our oil with different flavours ready to take home.

WOOD FIRED PIZZA NIGHT
Gather round the wood-fired oven and discover your inner pizzaiolo! Learn how to make pizza from start to finish with techniques that are simple, accessible, and yield excellent results. We'll cover the essentials of great dough, plant-based cheese know-how, and farm-fresh toppings.

VISIT MEDIEVAL VILLAGE
MAGLIANO IN TOSCANAA morning walk together around the beautiful village of Magliano, where we'll learn about its fascinating history and visit Tuscany's oldest olive tree. We'll have breakfast sitting in the village square, eating delicious treats from the local bakery and sipping a cappuccino.

OLIVE OIL TASTING AT THE
FRANTOIOA guided visit to the oil press, where we'll watch the olives we picked being turned into oil. We'll learn not only about the process the olives go through, but also how to taste olive oil and appreciate its unique qualities. At the end of it all, we'll be taking home the organic extra virgin olive oil made from the olives we picked.

TOUR OF THE FARM AND GROVES
A guided walk through the olive groves on the organic biodynamic farm to learn about the animals and plants, as well as the agricultural practices that shape the landscape. We'll end the day with an aperitivo outside the old farmhouse overlooking the lake, where the sunsets are spectacular and stretch all the way to the sea.

Long, lazy breakfasts sipping cappuccino on the garden terrace, eating local breads, jams and fruit, olive oil from the farm, homemade cakes, and the freshest bruschetta you've ever tasted. One day we'll have breakfast in the local village, with delicious vegan cornetti and pizza rossa.

creative timeLearn the secrets of farm-to-table plant-based cooking. Ingredients will change daily depending on the season and availability. It could be local pasta recipes, soups and stews from the cucina povera tradition, salads using ancient grains, or gnocchi made with locally ground chestnut flour. Maybe you'd prefer to join us in the garden picking olives, work on some watercolours, play with collage, or try your hand at making soap from olive oil. It's up to you!

Afternoons can be for exploring, whether that's a trip to the hot springs, the olive press, or a walk around the farm or the regional park. They can also be for doing absolutely nothing and learning the art of ‘dolce far niente’ (the sweetness of doing nothing) - sitting by the pool with a book, napping in the shade of a tree, or enjoying a glass of something on the terrace.

An evening spritz to unwind at the end of the day, starting, of course, with a classic Aperol and then showing off our delicious homemade herbal syrups made from the herbs, flowers, and botanicals found in the garden. Think sparkling elderflower and sage, lemon basil, or oregano fizz. On pizza night, it's a selection of Italian beers.

the focus of the retreat
Join us on the farm in southern Tuscany to extend the summer and greet the autumn for a week-long exploration of all things olive. This is a chance to slow down, enjoy the golden late-summer light, and discover and eat our way through one of Italy's most beautiful olive-producing regions, the Maremma.
Together, we will follow the journey of the olive from branch to plate. We will learn about the olive harvest, try traditional harvesting methods, visit the local oil press to watch the olives being processed and taste different varieties of olive oil, and everybody will return home with their own olive oil.
Alongside the olive harvest, there will be plenty of time to enjoy life on the farm. We'll share long meals made with seasonal local produce, celebrating the delicious variety of plant-based food found in this part of Tuscany. Guests can join farm-to-table cooking workshops, learn traditional pasta recipes, make pizzas and cook them in the wood-fired oven, take part in crafts and soap making, or simply relax by the pool or in the gardens.

She was lucky enough to grow up eating incredible food made by local women whose families have lived here for generations: simple food rooted in tradition, seasonality, and local ingredients.
Committed to fair work, genuine collaboration, and steady growth, she is passionate about this place and about encouraging tourism that is rooted in and respectful of the local area and the people who live here. After spending her twenties travelling and working in kitchens, hotels, farms, and schools, she returned to Santa Virginia to bring a new perspective, welcome people to this beautiful, lesser-known, slightly wild corner of Tuscany's Maremma region, and share the knowledge and care that shaped her upbringing.
